Slow Cooker Creamy Spinach and Tortellini Soup

I love the soup in the fall…okay I love this soup ANY time of year. Summertime in Florida is hot & humid, but on a rainy day with the AC cranked up, this soup makes escaping the heat of the evening heavenly.

There’s not much prep work with this recipe. It’s simple and easy. It’s delicious. I never liked mushrooms until I had them in this soup. It just makes everything taste great. I love pairing it with a simple Sauvignon Blanc as the icing on this entrĂ©e cake. This is one you have to try.

I am very excited to share this recipe. I have to thank Kimberly Snyder for inspiring me to create my very first plant-based dessert. She is the true mastermind behind this recipe. You can find more details about the recipe from her book Beauty Detox Foods. I realize the sound of a dessert being called “plant based” isn’t very exciting; however, this one may pleasantly surprise you. It’s creamy and deliciously tangy.

This week was certainly the week of the Bertolli pasta sauce and mayo steals. Funny thing is we only use mayo on rare occasion or when we have friends and family over to eat. Since I’ve devoted myself to bumping up nutrition in our meals, I use hummus instead of mayo on my sandwiches and it is SO good. Fortunately for me Sabra hummus was also on sale this week too!

Whenever I go to our local farmer’s market, I end up buying a TON of fresh produce. I get inspired. I get excited. I dream of all the healthy dishes I will prepare for the week. I lug it home and reality sets in. This is a LOT of food and it is not going to last very long. We do eat loads and loads of fruits and vegetables around our household, since I am a huge smoothie advocate; we always have fresh greens and vegetables on hand. Even though we are consuming a lot, there is just no room to let things spoil. Because if it’s spoils, you are literally throwing your hard earned money in the garbage!

Today is a perfect example of why I appreciate coupons. I searched for the best deals, headed to Publix armed with my stack of coupons and list and paid very little for a LOT of stuff (particularly a LOT of ginger ale!) I did shop at two different Publix stores simply because the store I frequent is much smaller in size and the 6 cases of ginger ale I purchased cleared them out for that day! Yikes! It really was too good of a deal to pass up snagging another 6 cases (see below) since I had the coupons to use.

We all know we should be eating our veggies, but do we eat as much as we should? If you already do, good job. You get a cookie. Just kidding. It's definitely a rarity these days with our typical standard American diet consisting of mainly processed and fast foods. Honestly, I used to go DAYS without preparing fresh vegetables for a snack or to eat with a meal. I knew I felt better when I ate better, but I was never very excited about crunching on a carrot stick when I felt famished.

Then I discovered the smoothie. I'm not talking about "Smoothie King" smoothies, full of powders and sugars. I'm talking about fresh vegetables, fresh fruit, and combinations that fuel your body with what it was designed to consume.

Perfect Pairing

I spent an undisclosed amount of time typing away my very first blog post explaining why I decided to begin a blog. I did a little research on other cherished blogs and saw this was common practice. Except it just doesn't suite me. Without hesitation it was deleted with the realization that it's actually quite simple. Me and a blog. It is a perfect pairing. Kale salad and red wine. Also a perfect pairing (see photo). All I know is my desire is to reignite my passion to write and express that my life is simply a collection of beautiful, messy moments I want to share with transparency. Life is such a blur that you can see time slip away like water running through your fingers. Lets all take time to capture those moments...and be inspired.

Kale Salad

Ingredients:
1 bag of Kale (organic)
2 Tbsp. of olive oil
3 garlic cloves, minced
1 fresh squeezed lemon
Cajun seasoning to taste
pepper to taste
 1/2 cup walnuts, chopped
1/2 cup shaved parmesan cheese
1 tomato, chopped
1 avocado

Massage all ingredients together (except tomato) until soft and wilted. Add tomatoes and serve. Delicious.
