Sunday Funday

The weekend was in full swing and I was fully enjoying the summer sun by the pool. I got a brilliant idea to try out my second pin on the Pinterest Challenge. It just made an already relaxing afternoon that much more fun.



 
 
These were a refreshing treat and tasted just like they were ordered from a swim up bar at some fancy resort. Absolutely fabulous.

Ingredients:



4-5 fresh strawberries
1/4 cup of fresh mint leaves
3 oz. of simple syrup (made by using equal amount of sugar and water, heat in a saucepan until the sugar dissolves completely, then allow to cool to room temperature. easy breezy)
2 oz. of rum
1 1/2 teaspoons of fresh squeezed lime juice
club soda
lime slices and whole strawberries for garnish
crushed ice

Place strawberries, mint and crushed ice in a tall glass and muddle together with the back of a spoon. Add simple syrup, rum, and lime juice and pour the club soda until it fills the glass. Give the drink a quick stir. Garnish with a few lime slices inside the drink and strawberry on the rim.

*You could make this ahead of time by muddling the strawberries, mint, and some crushed ice and set aside in the fridge or freezer (you would just need to let it thaw slightly before using).



 

 
Later that evening I tried another new recipe called
 
 


Fresh tomatoes. Fresh basil. This one is easily going to become a new favorite.
